If you change a product or category definition in the Commerce Catalog&Inventory Schema Manager you will need to let Sitecore know about these changes. You can do this using the Update Data Templates button in the Sitecore Commerce toolbar.
Don't forget to do this, otherwise products or categories with this new definition, won't show up in the Sitecore content editor.
